Chocolate covered mint leaves make an incredibly unique, fresh-tasting dessert. This is mostly for grownups – the kids tend to be less appreciative of the natural mint flavor.

Ingredients
20 fresh mint leaves
1 ounce (60 pieces) semisweet chocolate chips
1 teaspoon light olive oil (not extra-virgin)
Directions
1. Melt the chocolate chips in a small bowl in the microwave, on medium power, in 30-second intervals.
2. When melted, add the oil and mix with a fork.
3. Using a pastry brush, brush the mint leaves with the melted chocolate.
4. Place on wax paper and allow to dry, about 1 hour.
