gluten free huh? i fell for ya. so here is a post for YOU! these spicy quinoa pizza bites are just what you need to fill that pizza hole in your heart. made with quinoa, spicy habanero sauce, pepperoni, mozzarella cheese and baked into perfect mini bites with crispy edges – this recipe is just the ticket i tell ya.
my love for quinoa has grown over the last few months – between the tacos, & the southwest salad you may think i have gone all healthy on you… (well i redeemed myself a bit with those s’mores brownies).
healthy doesn’t have to mean boring – so with these gluten free pizza bites i wanted to give them a little kick. i used the El Yucateco Black Label Reserve chile habanero sauce (found exclusively at Walmart) because it has just the right amount of heat and a great smoky flavor that compliments the pepperoni. now annnnnnyone who knows me knows that i am a total wimp when it comes to spice so i was sure to taste test these with the hubby. he says it has a nice heat finish at the end and a good smoky flavor – but it could be more spicy. i added a teaspoon in this batch – if you love heat add a 1/2 tsp – 1 tsp more. if making them for the kiddos – a 1/2 tsp less is a good balance.
the trick to these little guys is getting them packed into the mini muffin tin so they stay compact – this photo is before i smooched them down. add a heaping tablespoon to each cavity and then go back over them and press them until compacted.
they are the perfect size for little hands too! my daughter loved them (she is a wimp like me though and said they were a bit spicy lol) if making them for the kiddos consider a 1/2 tsp of the chile sauce.
Gluten Free Spicy Quinoa Pizza Bites Recipe
- 2 cups cooked quinoa
- 2 eggs
- 1 tsp onion powder
- 1 tsp garlic (minced or paste)
- 1 cup pepperoni
- 1 cup mozzarella cheese
- 1 tsp habanero sauce
- Preheat oven to 350 degrees
- Combine all ingredients
- Grease mini muffin pan and place 1 heaping tablespoon of the mixture into each cavity
- Press down to compact the mixture and remove any air
- Bake for 15-20 minutes until the edges are golden brown and cooked through
- Remove from the muffin tin and serve with marinara dipping sauce
- Makes 24 mini pizza bites
- Note: For kids, consider reducing habanero sauce to ½ tsp
the black label reserve sauce is made exclusively for Walmart (it was my favorite!) but you can find the other El Yucateco sauces there as well including the green habanero & red habanero, and the XXXtra hot kutbil-ik sauce (not pictured). each has a distinctive flavor so try them all! you can find them in the aisle with the hot sauces! be sure to check out more recipes here
