600gr Soft Shelled Crabs.
100gr Coconut fruit
100 gr Scraped Coconut meat
50gr Chinese Violet
4 bulbs Indian Taro
1 teaspoon salt, ½ teaspoon of Curry Powder, ½ teaspoon pepper, garlic and spring onion.
Step 1: Clean crabs. . Peel off the cover of pine-apple, slices small. You make the same process with Indian Taro. Clean Chinese Violet
Step 2: Making first coconut syrup: Put 100gr scraped coconut meat into bowl, pour 250 ml hot water, mix it together and then squeeze the first coconut syrup out of scraped coconut meat. This process is really necessary in most easy Vietnamese recipes.
Step 3: Pour olive oil into pan, put sliced garlic, fry about 1 minute and add crabs into pan. Cook until the color turns red yellow. Then, add more first coconut syrup, sliced pine-apple and Indian taro.
Step 4: Sliced Spring onion. Boil the coconut fruit, taste it with salt, pepper and curry powder. Next, add sliced Chinese Violet with spring onion into mixture.
Finally, you can serve it to your family and friends. Put crabs into dish; pour soup on the surface of it. We suggest you should eat when it is still hot.
